Pistachio and Mint Brownies Recipe

These Pistachio and Mint Brownies are a tasty twist on traditional chocolate brownies. The chopped pistachios add a crunchy texture to the brownies, and the fresh mint leaves add a refreshing flavor.

  • Cook Time: 30 minutes
  • Total Time: 50 minutes

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Coat a 9x13-inch baking pan with nonstick cooking spray.
  • Melt the butter in a medium saucepan over low heat.
  • Stir in the sugar, cocoa powder, and salt until smooth.
  • Remove from the heat and add the vanilla extract.
  • One at a time, add the eggs, stirring well after each addition.
  • In a small mixing bowl, combine the flour, baking powder, and cardamom.
  • Stir in the flour mixture until just combined with the chocolate mixture.
  • Fold in the pistachios and mint leaves, if using.
  • Smooth the top of the batter into the prepared pan.
  • Bake for 25-30 minutes, or until a toothpick inserted into the centre reveals only a few moist crumbs.
  • Allow the brownies to cool completely before cutting into squares.
